Mussels are one of the favorite things to have for lunch especially during weekends when I have time to go to the nearby wet market. Everyone but our son enjoys this whether baked or cooked/boiled with lemongrass.
In short, we had mussels again last weekend and since we weren’t able to have the baked ones for dinner, my daughter Trix asked me to just prepare these for her lunch in school.
These were baked with garlic, butter and finely chopped parsley. Was supposed to make the mix but since we still have a small tub of this from a bakery, that was what I used.
The younger children and I had a different lunch although these were not all eaten because we had free lunch at work and with KFC fried chcken, they didn’t even look at our viand. Good thing I did not take even a single photo of it
Anyway, for snacks, we had the Banana-Oats-Chocolate chips bars which I featured in my other blog. Should have been muffins but we ran out of muffin liners.
